Lemon Butter Cookies
This recipe is a modified version of my grandmother’s butter cookies. I was out of vanilla one day and thought I would try a lemon version of them. My neighbor Tejal had some delicious lemon curd she had given me, so I sliced the cookies extra thin and made little sandwich cookies with the lemon curd. I can’t get enough of these cookies! Neither can my friends, it seems. (Yuko and Ananth asked me to make a comic of this recipe since they liked it so much.)
This dough also freezes really well (and slices better when super cold), making it a great recipe to make ahead of time. I like to save half of the recipe for unexpected guests/late night baking, or if I know I’m going to be too busy to bake something for my Monday drawing group friends.
