Cilantro Walnut Pesto
If you’re anything like me, you buy a bunch of cilantro to use in a recipe, manage to use a small fraction of it, then are left with a large bunch of quickly wilting cilantro. This recipe is a great way to use that leftover cilantro (stems and all!) and transform it into something that will keep longer.
I love eating this pesto simply mixed in with some pasta, but you could use it in any way that you’d usually use pesto. Maybe as a rub for meat? Or as an addition to a sandwich? The possibilities are endless!
